• EASY PEASY TURKEY PIE

After watching the food network for an endless amount of time I decided to step out of my rice dish comfort zone and try something different.
Today I am sharing with you a super easy beginner level (yup) turkey and vegetable  pie recipe. Its not as amazing  as Jamie Oliver ‘s but Its my first time making it and it turned out great. My fussy eater daughter actually asked for a second helping. We shall take that as a positive right shall we?
My recipe is not a very traditional  one but since it worked then I guess we shall go with it.
    6 servings
    Prep time: 15mins
    cooking time:50mins

    INGREDIENTS

    For Pastry

    1 cup butter (salted)
    21/2 cups plain flour
    1/2 cup cold water

    For Filling

    300g Chopped turkey
    2tbsp cooking oil
    1 medium sized onion
    500g mixed vegetables
    2 Maggie chicken cubes
    350g chicken stock
    1 diced green bell pepper
    1 tbsp flour
    1tsp salt
1/2 tsp cayenne pepper if desired
    DIRECTIONS
    Pastry:
Put flour, butter and water together into a mixing bowl and mix ingredients together into a ball.
Wrap the dough in cling film and put it away into the freezer for later.
    Filling:
Put oil into a wok and sauté onion and mixed vegetable.
While this cooks away on low heat prepare your  turkey.
Season turkey with one maggie chicken cube and a pinch of salt and put the turkey into a baking tray and put it into the oven until in turns golden.
Put the turkey into the  stir fried veggies in the wok and add 1 maggie chicken cube.
    Now prepare your sauce.
In a bowl pour in your chicken stock and the turkey juices from the baking pan and add a tablespoon on plain flour to make a sauce and turn into your stir fry.
Now spoon your stir fry into into your pie dish.
Get your pastry dough from the freezer and  roll out  flat to cover the top of your dish and trim off the excess. Brush some milk on to the top of the pie and pop
it into your oven (mine was preheated because I used it for the turkey)
And cook till it turns golden(mine turned golden in about 15mins
    ENJOY!!!

    Smooches, Mariànne

I like this recipe. The mixed vegetables is colourful. Recipe seems easy to prepare as well. I will try it and see how it goes.
